Ingredients
For the chicken
- 4 4-oz. boneless chicken breasts
- olive oil for drizzling
- salt and pepper for seasoning
- 1-2 cloves of garlic
- 1/2 cup of cherry tomatoes
- 1/3 cup of kalamata olives
- 1/4 cup of sundried tomatoes
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- Preheat oven to 375 degrees F.
- Place chicken breasts in an oven-safe dish. Drizzle with olive oil and sprinkle with salt and pepper.
- Bake chicken for ~ 30 minutes.
- In a food processor, place the garlic, tomatoes, olives, sundried tomatoes, salt, pepper, and lemon juice. Pulse until the ingredients are well-incorporated but still chunky.
- Spread salsa mixture over baked chicken.
